This flavorful dish combines savory sausage, sweet potatoes, and onions, all cooked together until golden and crispy. The crowning glory is a perfectly fried egg with a runny yolk that adds a rich and creamy element to the dish. It’s a hearty and nutritious meal that will keep you satisfied for hours. Let’s get started!

Ingredients

Units Scale
  • 8 ounces (225g) breakfast sausage, casings removed
  • 2 cups diced sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup diced onion
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 large eggs
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat. Add the sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through. This step takes about 5-6 minutes. Remove the cooked sausage from the skillet and set it aside.
  2. In the same skillet, add the diced sweet potatoes, onion, paprika, dried thyme, salt, and pepper. Cook, stirring occasionally, until the sweet potatoes are tender and lightly browned. This step takes about 12-15 minutes.
  3. While the sweet potatoes are cooking, in a separate non-stick skillet, fry the eggs to your desired level of doneness. For a sunny-side-up egg with a runny yolk, cook it for about 3-4 minutes.
  4. Once the sweet potatoes are cooked, return the cooked sausage to the skillet and toss everything together to combine. Cook for an additional 1-2 minutes to heat the sausage through.
  5. Divide the sausage and sweet potato hash among four plates. Top each portion with a fried egg and sprinkle with chopped fresh parsley if desired. Serve immediately.

Notes

Choose your favorite type of breakfast sausage for this dish. You can opt for mild, spicy, or even maple-flavored sausage to add different flavor profiles. Also make sure to dice the sweet potatoes into small, evenly sized pieces to ensure they cook through evenly. If you prefer a softer texture for the sweet potatoes, cover the skillet while cooking and stir occasionally to prevent sticking. Feel free to customize the dish by adding additional vegetables such as bell peppers or spinach. You can also sprinkle some shredded cheese on top of the hash before adding the fried egg for an extra indulgent twist. Enjoy!
