  • Prep Time: 5 minutes
  • Cook Time: 25-26 minutes
  • Total Time: 31-32 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 8 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the linguine according to the package instructions until it’s al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for 5 minutes until they are tender and slightly browned.
  4. Push the mushrooms to one side of the skillet and add the shrimp. Cook the shrimp for 2-3 minutes on each side until they are pink and opaque.
  5. Stir in the diced tomatoes, chicken or vegetable broth, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld.
  6. Add the cooked linguine to the skillet and toss everything together until the pasta is well coated in the tomato sauce.
  7. Divide the linguine among serving plates and top each portion with grated Parmesan cheese and fresh basil.

Notes

For an extra kick of heat, add some red pepper flakes to the sauce. You can also customize the dish with your favorite vegetables like spinach or bell peppers if desired. Serve the linguine with a side of garlic bread or a simple green salad for a well-rounded meal. Enjoy!
