  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 8 oz (225g) fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, thinly sliced
  • 1/2 cup grated Parmesan cheese plus more for topping if desired
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. In a large pot, cook the fettuccine pasta according to the package instructions until al dente. Drain the pasta and set it aside.
  2. Season the chicken breasts with salt and black pepper to taste.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side until they are fully cooked and golden brown. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Lower the heat to medium and stir in the halved cherry tomatoes and sliced basil. Cook for 2-3 minutes until the tomatoes start to soften.
  6. Pour in the heavy cream and bring it to a gentle simmer. Let it cook for another 2 minutes to thicken slightly.
  7. Return the cooked chicken to the skillet and gently toss everything together to coat the chicken and tomatoes with the creamy sauce.
  8. Add the cooked fettuccine to the skillet and gently toss until the pasta is fully coated in the creamy sauce.
  9. Stir in the grated Parmesan cheese, and season with additional salt and pepper if needed.

Notes

To add a touch of heat, sprinkle some red pepper flakes or drizzle a bit of chili oil over the pasta before serving. For a lighter version, you can use half-and-half or whole milk instead of heavy cream, although the sauce will be slightly less creamy. Feel free to experiment with different types of pasta, such as penne or spaghetti, for a fun twist on the dish. Serve the Skillet Chicken Fettuccine with a side of garlic bread and a fresh green salad to complete the meal. Enjoy!
