  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup pitted Kalamata olives
  • 2 tablespoons capers
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Start by bringing a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Meanwhile, season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through. Remove from the skillet and let them rest for a few minutes before cutting as desired.
  3. In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant. Add diced tomatoes, Kalamata olives, capers, and red pepper flakes. Season with salt and pepper to taste. Simmer the sauce for about 5 minutes to allow the flavors to meld together.
  4. Toss the cooked spaghetti into the skillet with the sauce, combining them well. Add the chicken breast to the skillet and gently toss to incorporate. Cook for an additional 1-2 minutes until everything is heated through.
  5. Serve the Spaghetti Puttanesca with Chicken in pasta bowls, garnished with fresh parsley or basil.

Notes

When cooking the chicken, make sure it is properly seasoned and cooked until it reaches an internal temperature of 165°F (74°C). This will ensure moist and tender chicken pieces. Additionally, taste the sauce as you go and adjust the seasonings to suit your preferences. Don’t be afraid to add extra red pepper flakes if you like a spicier kick.
