  • 1/2 cup julienned cucumber
  • 1/2 cup julienned carrot
  • 1/4 cup julienned radish
  • 2 green onions, thinly sliced
  • 2 hard-boiled eggs, halved
  • Optional: sliced jalapenos

Instructions

  1. Cook the noodles according to the package instructions. Drain and rinse them under cold water to stop the cooking process. Set them aside.
  2. In a mixing bowl, combine the gochujang, soy sauce, rice vinegar, sesame oil, honey or sugar, minced garlic, and grated ginger. Stir well until the sauce is smooth and well incorporated.
  3. In a separate bowl, combine the julienned cucumber, carrot, and radish. Toss them together to mix.
  4. Divide the cold noodles into serving bowls. Pour the spicy sauce over the noodles and toss them gently to coat.
  5. Top the noodles with the pickled veggies, sliced green onions, and half of a hard-boiled egg.
