Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Season with salt and pepper to taste.
  4. Remove the skillet from heat and let the spinach mixture cool slightly.
  5. Slice a pocket into each chicken breast by making a horizontal cut along the side, being careful not to cut all the way through.
  6. Stuff each chicken breast with an equal amount of the sautéed spinach and crumbled feta cheese. Use toothpicks to secure the openings and keep the filling intact.
  7. Season the stuffed chicken breasts with salt and pepper on both sides.
  8. Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
  9. Transfer the seared chicken breasts to a baking dish and place them in the preheated oven.
  10. Bake for 15-20 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  11. Once cooked, remove the toothpicks and let the chicken rest for a few minutes before serving.

Make sure to properly season the chicken breasts with salt and pepper both inside and outside. You can add a sprinkle of your favorite herbs or spices to the filling mixture for additional flavor.
