  • 8 oz flat rice noodles
  • 8 oz pork shoulder, thinly sliced
  • 2 cups Chinese broccoli (gai lan), cut into bite-sized pieces
  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon brown sugar
  • Fresh lime wedges, for garnish

Instructions

  1. Cook the flat rice noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce, dark soy sauce, and brown sugar. Set aside.
  3. Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl to coat the wok.
  4. Add the sliced pork shoulder to the wok and stir-fry until fully cooked. Remove from the wok and set aside.
  5. In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté until fragrant.
  6. Push the garlic to the side of the wok and crack the eggs into the empty space. Scramble the eggs until cooked.
  7. Add the cooked rice noodles and the prepared sauce to the wok. Toss everything together to coat the noodles evenly.
  8. Add the Chinese broccoli to the wok and continue to stir-fry for a couple of minutes until the broccoli is tender and bright green.
  9. Return the cooked pork to the wok and give everything a final toss to combine.
  10. Divide the dish among serving plates and garnish with fresh lime.

Notes

For a spicy kick, feel free to add some Thai chili flakes or sliced red chili peppers. You can also customize your protein by using chicken, shrimp, or tofu instead of pork. Dark soy sauce adds color and depth of flavor to the dish; however, you can omit it if you don’t have it on hand.
