  • 1 green pepper, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup sweet and sour sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 2 cups cooked white rice
  • Chopped green onions, for garnish

Instructions

  1. Season the pork pieces with salt and black pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Fry the pork until it’s golden and crispy on all sides, about 3-4 minutes. Transfer to a plate lined with paper towels.
  3. In the same skillet, add the sliced red onion and green pepper. Sauté for about 2-3 minutes until slightly tender.
  4. Add the pineapple chunks, sweet and sour sauce, soy sauce, rice vinegar, and brown sugar to the skillet. Stir and let the sauce simmer for another 2-3 minutes.
  5. Return the fried pork to the skillet and toss it in the sauce to coat. Cook for an additional 2 minutes to heat everything through.

Notes

For a touch of heat, feel free to add a pinch of red pepper flakes to the sauce. You can customize the dish with other vegetables like carrots, snow peas, or baby corn.
