Ingredients

Units Scale
  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 4 cups arugula, washed and dried
  • 1/2 cup walnuts
  • 1/2 cup crumbled goat cheese
  • 3 tbsp olive oil

For the dressing:
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Roast the Sweet Potatoes (25 minutes): Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes in 2 tbsp of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned. Allow them to cool slightly.
  2. Toast the Walnuts (5 minutes): In a dry skillet over medium heat, toast the walnuts, stirring occasionally, until they’re fragrant and lightly browned, about 3-5 minutes. Remove from heat and set aside.
  3. Prepare the Dressing (5 minutes): In a small bowl, whisk together olive oil, balsamic vinegar, honey (or maple syrup), minced garlic, salt, and pepper. Adjust the seasoning to your taste.
  4. Assemble the Salad (10 minutes): In a large bowl, combine the arugula, roasted sweet potatoes, toasted walnuts, and crumbled goat cheese. Drizzle with the dressing and toss gently to combine. Adjust seasoning if needed.
  5. Serve (2 minutes): Dish out the salad onto plates and enjoy immediately.

Notes

This salad is all about texture and contrast. For a variation, you could add dried cranberries or pomegranate arils for a touch of sweetness. Grilled chicken or steak could also be added to make it a heartier main dish. Remember, salads like this are versatile, so don’t hesitate to make it your own! Serve with a crisp white wine or a refreshing iced tea for added depth.
