  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 8 oz wide rice noodles
  • 1 lb chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 Thai chili peppers, thinly sliced (adjust according to your spice preference)
  • 1 cup fresh basil leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1/4 cup chicken broth
  • Lime wedges, for serving

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced chicken breast. Stir-fry for about 3-4 minutes until the chicken is cooked through and slightly browned.
  3. Push the chicken to one side of the skillet and add the sliced chili peppers. Cook for about 1 minute to release their spiciness.
  4. Add the cooked rice noodles to the skillet, followed by the soy sauce, oyster sauce, fish sauce, sugar, and chicken broth. Toss everything together until the noodles are well coated in the sauce.
  5. Add the fresh basil leaves to the skillet and stir-fry for another minute until the basil wilts.

Notes

Feel free to adjust the amount of chili peppers according to your spice tolerance. You can also remove the seeds to reduce the heat. Be careful not to overcook the rice noodles; they should be al dente to maintain their texture. Fresh basil adds a wonderful aroma and flavor to the dish, so try to use it if possible. Thai basil is the traditional choice, but Italian basil works well too. Feel free to customize the recipe by adding other vegetables such as bell peppers, carrots, or broccoli. Enjoy!
