Instructions

  • Preheat the oven (5 minutes): Preheat your oven to 350°F (175°C). Ensure your tube pan (angel food cake pan) is clean and dry. Do not grease the pan.
  • Prepare the dry ingredients (5 minutes): In a medium bowl, sift together the cake flour, cocoa powder, and 1/2 cup (100g) of granulated sugar. Sift these ingredients together three times to ensure they are well combined and aerated.
  • Beat the egg whites (10 minutes): In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and salt, and continue to beat until soft peaks form. Gradually add the remaining 1 cup (200g) of granulated sugar, a tablespoon at a time, and beat until stiff peaks form.   • Fold in the dry ingredients (5 minutes): Sift the dry ingredients over the beaten egg whites in three additions, gently folding with a rubber spatula after each addition until just combined. Be careful not to deflate the egg whites.

  • Prepare the chocolate glaze (10 minutes): In a heatproof bowl, combine the semi-sweet chocolate chips, heavy cream, and butter. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and the mixture is smooth. Stir in the vanilla extract.
