Instructions

  1. Bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions until it is al dente. Drain the pasta and set it aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chantarelles to the skillet and cook them for 2-3 minutes until they are tender and lightly browned.
  4. Stir in the fresh spinach leaves and let them wilt in the skillet for about a minute.
  5. Pour in the vegetable or chicken broth and bring it to a simmer. Add the chopped sun-dried tomatoes and let the mixture cook for an additional 2 minutes.
