Arroz con pollo, which translates to “rice with chicken,” is a classic Latin American dish known for its vibrant flavors and comforting qualities. • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon turmeric
  • 2 cups chicken broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet skin side down. Cook until golden brown and crispy, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion, red bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the rice, paprika, cumin, dried oregano, and turmeric. Cook for 1-2 minutes, stirring constantly to coat the rice with the spices.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, nestle the browned chicken thighs and frozen peas into the rice mixture. Cover and continue to simmer for an additional 10 minutes or until the rice is tender and the chicken is cooked through.

Notes

For maximum flavor, brown the chicken thighs before adding them to the rice. This step helps to seal in the juices and adds a delightful crispiness to the skin. Feel free to customize your arroz con pollo by adding other vegetables such as carrots, corn, or diced tomatoes. You can also add a touch of spice with a pinch of cayenne pepper or a diced jalapeño pepper. Use long-grain rice for the best results, as it tends to hold its shape and absorb flavors well. However, you can also use other types of rice if that’s what you have on hand. Be sure to let the arroz con pollo rest for a few minutes after cooking to allow the flavors to meld together. Enjoy!
