  • Total Time: 2 hours, 25 minutes
  • Yield: 4–6 servings 1x

Ingredients

Units Scale
For the mousse:
  • 8 ounces dark chocolate (70% cocoa), chopped
  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/4 cup Bailey’s Irish Cream liqueur
  • 1 cup heavy cream, chilled
  • 1 teaspoon vanilla extract
  • Pinch of salt
For garnish:
  • Whipped cream (optional)
  • Shaved chocolate or cocoa powder (optional)

Instructions

  1. Melt the chocolate (5 minutes):
    • In a heatproof bowl, combine the chopped dark chocolate and unsalted butter.
    • Set the bowl over a pot of simmering water (double boiler method), stirring occasionally until the chocolate and butter are completely melted and smooth.
    • Remove from heat and let it cool slightly.
  2. Prepare the egg yolk mixture (5 minutes):
    • In a medium bowl, whisk the egg yolks with the granulated sugar until pale and thick, about 2-3 minutes.
    • Gradually whisk in the Bailey’s Irish Cream liqueur and vanilla extract until smooth.
    • Slowly add the melted chocolate mixture to the egg yolk mixture, whisking constantly until well combined. Set aside.
  3. Beat the egg whites (5 minutes):
    • In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form.
    • Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the mixture.
  4. Whip the cream (5 minutes):
    • In another bowl, beat the chilled heavy cream until it reaches soft peaks.
    • Gently fold the whipped cream into the chocolate mixture until fully incorporated and smooth.
  5. Assemble the mousse (5 minutes):
    • Spoon or pipe the mousse into individual serving containers, such as small glasses, ramekins, or cups.
    • Smooth the tops with the back of a spoon.
  6. Chill the mousse (2 hours):
    • Refrigerate the mousse for at least 2 hours, or until set and firm.
  7. Garnish and serve:
    • Just before serving, top each mousse with a dollop of whipped cream (if using), a sprinkle of shaved chocolate or cocoa powder, or any garnish of your choice.
    • Serve chilled, and enjoy your luxurious Bailey’s dark chocolate mousse!

Notes

This mousse can be made a day in advance and kept in the refrigerator until ready to serve, making it a perfect dessert for dinner parties or special gatherings.

If you prefer a stronger Bailey’s flavor, you can increase the amount of liqueur slightly, but be mindful that it may affect the texture of the mousse.

This dessert pairs wonderfully with a cup of coffee or a glass of Bailey’s on the rocks. Enjoy!
