Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the elbow macaroni according to the package instructions for al dente, then drain and set aside.
  3. In a medium saucepan, heat the milk over low heat until warm but not boiling.
  4. In a separate, larger saucepan, melt the 1/4 cup butter over medium heat. Add the flour, whisking continuously for about 2 minutes to create a roux.
  5. Slowly add the warmed milk to the roux, whisking constantly to avoid lumps. Continue to cook and whisk until the sauce thickens, about 10 minutes.
  6. Remove the sauce from heat, and season with salt, pepper, and nutmeg.
  7. Stir in the cheddar and Gruyère cheeses until fully melted and smooth.
  8. Add the cooked macaroni to the cheese sauce, stirring until well combined.
  9. Pour the macaroni and cheese mixture into the prepared baking dish.
