Ingredients

Units Scale
For the sponge cake:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
For the vanilla custard filling:
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
For the chocolate glaze:
  • 1/2 cup heavy cream
  • 4 ounces semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons corn syrup (optional, for shine)

Instructions

  1. Prepare the Sponge Cake (30 minutes + cooling): Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, then the vanilla, mixing well after each addition. Alternately add the dry ingredients and milk, beginning and ending with the dry ingredients. Divide the batter evenly between the prepared pans and bake for 20-25 minutes. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  2. Make the Vanilla Custard Filling (15 minutes + chilling): In a saucepan, heat the milk and half of the sugar until simmering. In a bowl, whisk together the egg yolks, cornstarch, and remaining sugar. Gradually whisk in the hot milk mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in vanilla extract, and cover with plastic wrap touching the surface to prevent a skin from forming. Chill until set, about 2 hours.
  3. Prepare the Chocolate Glaze (10 minutes): Heat the heavy cream in a saucepan until simmering. Remove from heat and add the chopped chocolate, butter, and corn syrup. Let sit for a few minutes, then stir until smooth and glossy.
  4. Assemble the Boston Cream Pie (10 minutes): Place one cake layer on a serving plate. Spread the chilled custard evenly over the top. Add the second cake layer. Pour the chocolate glaze over the cake, allowing it to drip down the sides. Refrigerate until the glaze is set.
  5. Serve: Slice and serve the Boston Cream Pie chilled or at room temperature.

Notes

Boston cream pie is a timeless dessert that offers a perfect blend of flavors and textures. For a successful cake, ensure that all ingredients are at room temperature before starting.

The custard should be thick enough to spread but not so firm that it doesn’t adhere to the cake. For the chocolate glaze, achieving the right consistency is key – it should pour easily but not be too runny.

With attention to detail and a bit of patience, you’ll create a Boston Cream Pie that’s as beautiful as it is delicious.
