  • 4 red bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking dish with foil sprayed with cooking spray.
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the shredded chicken, cooked wild rice, chopped herbs, mozzarella cheese, grated Parmesan cheese, minced garlic, and olive oil. Season with salt and pepper to taste.
  4. Stuff the mixture into the hollowed-out red bell peppers, pressing down gently to pack the filling.
