  • 8 oz lo mein noodles
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 small eggplant, sliced thin
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 zucchini, sliced thin
  • 2 tablespoons vegetable oil
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)

Instructions

  1. In a pot of boiling water, cook the noodles according to the package instructions. Drain and set aside.
  2. In a bowl, mix together the teriyaki sauce, soy sauce, minced garlic, and minced ginger.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and cook until it’s no longer pink, about 3-4 minutes per side.
  4. Pour the teriyaki sauce mixture over the cooked chicken and simmer for an additional 2 minutes, allowing the sauce to thicken. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  6. Add the diced eggplant, red bell pepper, onion, and zucchini. Sauté for about 5-6 minutes, or until the veggies are tender.
  7. Return the cooked chicken to the skillet with the sautéed veggies, tossing everything together to heat through.
  8. Add the cooked noodles to the skillet and gently mix until everything is well combined and heated. Add more teriyaki sauce if desired.
  9. Garnish with sesame seeds and sliced green onions, if desired.

Notes

Feel free to add or substitute veggies like broccoli, snap peas, or mushrooms to suit your taste. For extra heat, sprinkle some red pepper flakes over your finished dish. Leftovers can be refrigerated and enjoyed the next day, but noodles tend to absorb sauce, so you may need to add a splash more teriyaki sauce or soy sauce when reheating. Enjoy your meal!
