Instructions

  1. Prepare the Crust (15 minutes + chilling): Mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
  2. Make Chocolate Filling (20 minutes): In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens. In a separate bowl, whisk the egg yolks. Gradually add some of the hot milk mixture to the yolks to temper them. Then, return the egg yolk mixture to the saucepan. Cook for an additional 2-3 minutes, stirring constantly. Remove from heat. Stir in the butter, chopped chocolate, and vanilla until smooth.
  3. Assemble Pie (10 minutes): Pour the chocolate filling into the prepared crust. Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
  4. Prepare Whipped Cream (10 minutes): Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Top and Serve (5 minutes): Remove the pie from the refrigerator. Top with whipped cream and dust with chocolate shavings or cocoa powder.
