  • 4 thin slices of ham
  • 4 thin slices of Swiss cheese
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Using a meat mallet, pound chicken breasts until they are about 1/4 inch thick.
  3. Place a slice of ham and a slice of cheese on each chicken breast. Roll up tightly and secure with toothpicks.
  4. In a shallow bowl, mix together flour, paprika, salt, and pepper.
  5. In another shallow bowl, beat the egg.
  6. In a third shallow bowl, place the breadcrumbs.
  7. Coat each chicken breast in the flour mixture, then dip in the egg, and coat in breadcrumbs.

  9. Transfer chicken breasts to a baking dish and bake in the preheated oven for 10-15 minutes or until cooked through.
  10. In the same skillet, add chicken broth, heavy cream, Dijon mustard, and lemon juice. Cook over medium-high heat for 5-6 minutes, stirring constantly, until the sauce has thickened.
  11. Serve the chicken cordon bleu with the sauce drizzled on top.

Notes

To make the chicken cordon bleu even more delicious, you can add some chopped fresh herbs like thyme, parsley, or rosemary to the breadcrumbs. You can also experiment with different types of cheese and ham to create your own unique flavor combinations. When serving, remove the toothpicks from the chicken breasts to avoid any accidents. This dish pairs well with steamed veggies or a simple salad.

Pair this with...

Olive Oil Tomatoes

Grab a bunch of fresh cherry tomatoes, washing them and patting dry. Preheat your oven to 400°F (200°C). In a mixing bowl, toss the tomatoes with a generous glug of olive oil, ensuring each tomato is gleaming with a light coat. Now, mince up some garlic – a couple of cloves should do – and sprinkle it over the tomatoes. Choose your preferred herbs; rosemary and thyme work beautifully, but basil or oregano can be divine too. Roughly chop or tear your herbs and add them to the bowl. Season everything with salt and pepper and give it a good mix. Spread this vibrant mixture on a baking sheet in a single layer. Pop it in the oven for about 20-25 minutes or until the tomatoes are soft and slightly shriveled.

Sautéed Mushrooms

Start by cleaning your mushrooms — whether it's button, cremini, or shiitake — with a damp paper towel. Avoid washing them, as mushrooms soak up water easily. Slice them uniformly to ensure even cooking. In a large skillet over medium heat, melt some butter or heat a bit of olive oil. Add in the sliced mushrooms, spreading them out to avoid overcrowding. Let them cook without stirring for a few minutes to get a nice sear, then give them a toss. As they release their natural juices and start to brown, season with salt, pepper, and a touch of garlic (minced or powdered) for added flavor. Continue to cook until the mushrooms are tender and flavorful. Finish off with a sprinkle of freshly chopped parsley or thyme if desired.

Herbed Garlic Bread

Grab a fresh baguette or loaf of Italian bread and slice it as desired. In a bowl, mix together softened unsalted butter, finely minced garlic (the more, the merrier, but about 3-4 cloves should do), a good pinch of salt, and chopped fresh herbs. Parsley and basil are classics, but don't hesitate to throw in some oregano or rosemary if you're feeling adventurous. Spread this aromatic butter mix generously over the cut sides of your bread. Pop it under the broiler in your oven for about 2-4 minutes, or until the edges are golden and the butter is bubbling and fragrant. Keep a close eye on it, as broiling can quickly go from perfectly toasted to charred! Once done, slice it up and serve.
