- Prep Time: 10 minutes
- Cook Time: 20-25 minutes
- Total Time: 30-35 minutes
- Yield: 4 servings 1x
Ingredients
- 12 oz (340g) of your favorite pasta
- 1/2 lb (225g) Italian sausage, casings removed
- 8 oz (225g) mushrooms, sliced
- 1 small onion, finely chopped
- 1 small russet potato, thinly sliced
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) chicken or vegetable broth
- 1/2 cup (50g) grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil.
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the Italian sausage and break it into crumbles with a spatula. Cook until browned and cooked through.
- Remove the sausage from the skillet and set it aside.
- In the same skillet, add the butter and chopped onions. Sauté until the onions are translucent.
- Stir in the sliced mushrooms, sliced potato, and garlic. Sauté until the mushrooms and potatoes are tender and browned.
- Pour in the heavy cream and chicken or vegetable broth. Stir well.
- Add the grated Parmesan cheese and return the cooked sausage to the skillet.
- Simmer the sauce for 5-7 minutes, or until it thickens slightly. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet with the creamy sausage and mushroom sauce. Toss everything together until the pasta is well coated with the sauce.
- Dish out the creamy sausage and mushroom pasta onto plates.
- Garnish with freshly chopped parsley for a burst of color and freshness.
Notes
For an extra kick, add a pinch of red pepper flakes to the sauce. Freshly grated Parmesan cheese melts more smoothly into the sauce than pre-packaged grated cheese. Taste the sauce before adding extra salt, as the sausage and Parmesan cheese can already be salty. Serve this dish with a simple side salad and a slice or two of garlic bread for a complete meal. Enjoy!
