  • 1/2 lb (225g) Italian sausage, casings removed
  • 8 oz (225g) mushrooms, sliced
  • 1 small onion, finely chopped
  • 1 small russet potato, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken or vegetable broth
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the Italian sausage and break it into crumbles with a spatula. Cook until browned and cooked through.
  5. Remove the sausage from the skillet and set it aside.
  6. In the same skillet, add the butter and chopped onions. Sauté until the onions are translucent.
  7. Stir in the sliced mushrooms, sliced potato, and garlic. Sauté until the mushrooms and potatoes are tender and browned.
  8. Pour in the heavy cream and chicken or vegetable broth. Stir well.
  9. Add the grated Parmesan cheese and return the cooked sausage to the skillet.
  10. Simmer the sauce for 5-7 minutes, or until it thickens slightly. Season with salt and black pepper to taste.
  11. Add the cooked pasta to the skillet with the creamy sausage and mushroom sauce. Toss everything together until the pasta is well coated with the sauce.
  12. Dish out the creamy sausage and mushroom pasta onto plates.
  13. Garnish with freshly chopped parsley for a burst of color and freshness.

Notes
