Typically served at Greek restaurants or from food trucks, lamb gyros have amassed a huge fan base around the world. This recipe features thinly sliced lamb marinated in a mixture of Greek herbs and spices, warm pita bread, crisp lettuce, ripe tomatoes, and creamy tzatziki sauce. Now your food truck favorite can be made at home!

Ingredients

  • 1 pound boneless lamb meat, thinly sliced
  • 4 pita bread rounds
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tzatziki sauce, for serving
  • Sliced lettuce, tomatoes, and red onions, for garnish

Instructions

  1. In a bowl, combine the Greek yogurt, lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, and pepper to make the marinade.
  2. Add the thinly sliced lamb meat to the marinade and toss until well-coated. Allow the lamb to marinate for 10-15 minutes.
  3. Heat a skillet or grill pan over medium-high heat. Cook the marinated lamb slices for about 3-4 minutes per side, or until cooked to your desired level of doneness.
  4. Remove the lamb from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.
  5. Warm the pita bread rounds in a dry skillet for a few seconds on each side to make them pliable.
  6. To assemble the gyros, spread a generous amount of tzatziki sauce on each pita bread round. Top with the sliced lamb meat, lettuce, tomatoes, and red onions.
  7. Roll up the pita bread tightly to form a gyro wrap.

Notes

To enhance the flavor and tenderness of the lamb, feel free to marinate the meat in advance. For extra pizazz, you can also char the pita bread on a grill or stovetop for a few seconds.
