  • Total Time: 25 minutes
  • Yield: 4 gyros 1x

Ingredients

Units Scale
  • 1 pound boneless lamb meat, thinly sliced
  • 4 pita bread rounds
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tzatziki sauce, for serving
  • Sliced lettuce, tomatoes, and red onions, for garnish

Instructions

  1. In a bowl, combine the Greek yogurt, lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, and pepper to make the marinade.
  2. Add the thinly sliced lamb meat to the marinade and toss until well-coated. Allow the lamb to marinate for 10-15 minutes.
  3. Heat a skillet or grill pan over medium-high heat. Cook the marinated lamb slices for about 3-4 minutes per side, or until cooked to your desired level of doneness.
  4. Remove the lamb from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.
  5. Warm the pita bread rounds in a dry skillet for a few seconds on each side to make them pliable.
  6. To assemble the gyros, spread a generous amount of tzatziki sauce on each pita bread round. Top with the sliced lamb meat, lettuce, tomatoes, and red onions.
  7. Roll up the pita bread tightly to form a gyro wrap.

Notes

To enhance the flavor and tenderness of the lamb, feel free to marinate the meat in advance. For extra pizazz, you can also char the pita bread on a grill or stovetop for a few seconds. Feel free to load up your wrap with any other favorite veggies you have on hand — you really can’t go wrong. Enjoy!

Oven Fries

To start, grab a couple of good-sized spuds and slice them into wedges, not too thick or thin. Now, toss them in a mixing bowl with a drizzle of olive oil, a sprinkle of salt, and whatever seasonings you fancy - maybe some paprika, garlic powder, or even rosemary. Spread them out on a baking sheet, making sure they aren't crowded so they get crispy all around. Pop them into a preheated oven at 425°F (220°C). Give 'em about 25-30 minutes, but flip them halfway so they get golden brown on both sides. Once they're crispy outside and soft inside, they're done! Pull them out, let them cool just a smidge, and then dive in.

Tomato and Cucumber Salad

Begin with some ripe tomatoes and slice them into wedges. Take a cucumber and cut it into thin rounds. Mix them together in a bowl. Add a bit of olive oil and a splash of vinegar—red or white wine vinegar works best. Season with some salt and pepper to taste. If you've got some basil or dill on hand, you can chop that up and throw it in too.

Tabbouleh Salad

Start by preparing bulgur wheat as per the package instructions. While it's soaking, dice some ripe tomatoes and cucumbers into small pieces. Finely chop a generous bunch of fresh parsley and a bit of fresh mint. In a large bowl, combine the bulgur, tomatoes, cucumbers, herbs, and thinly sliced green onions. Drizzle in some olive oil and squeeze in the juice of fresh lemons, then season with salt and pepper. Give everything a good mix until well combined. If you're looking to add a burst of color and a hint of sweetness, sprinkle in some pomegranate seeds.
