If you’re craving an elegant but simple meal, look no further than this delicious and easy recipe. The creaminess of the polenta balances the bold flavors of the garlic shrimp, and the texture of the shrimp provides a perfect contrast to the soft polenta. Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon butter
  • 1 cup polenta
  • 4 cups water or chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Start by preparing the polenta. In a medium-sized pot, bring water or chicken broth to a boil. Slowly whisk in the polenta and continue to stir for 2-3 minutes, until the polenta begins to thicken.
  2. Reduce the heat to low and add in the heavy cream, stirring to combine. Continue to cook for an additional 5-10 minutes, stirring occasionally, until the polenta is creamy and fully cooked.
  3. While the polenta is cooking, prepare the garlic shrimp. In a large skillet, heat the olive oil and butter over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
  4. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for 2-3 minutes on each side, until they are pink and fully cooked.
  5. To serve, divide the polenta evenly among four bowls or plates. Top with the garlic shrimp and garnish with chopped parsley, if desired.

Notes

Be sure to stir the polenta frequently while it cooks to prevent it from sticking to the bottom of the pot. I’ll sometimes add a healthy dose of grated Parmesan cheese to the polenta for an extra layer of flavor as well. Serve with a side of steamed vegetables or a simple green salad to complete the meal.
