  • Prep Time: 15 minutes
  • Cook Time: 8-10 minutes
  • Total Time: 23-25 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 ears of corn, husked
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • Fresh cilantro or parsley, chopped (for garnish)
  • Optional toppings: avocado slices, crumbled feta cheese

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium heat.
  2. Place the corn on the grill and cook for about 8-10 minutes, turning occasionally, until the corn is tender and lightly charred. Remove from the grill and let it cool slightly.
  3. Once the corn is cool enough to handle, cut the kernels off the cob and place them in a large salad bowl.
  4. Add the black beans, mixed salad greens, cherry tomatoes, red onion, cucumber, and bell pepper to the bowl with the corn.
  5. In a small bowl, whisk together the olive oil, lime juice, honey or maple syrup, minced garlic, salt, and pepper to make the dressing.
  6. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  7. Garnish the salad with fresh cilantro or parsley.
  8. If desired, top the salad with avocado slices and crumbled feta cheese for extra flavor and creaminess.

Notes

Make sure to cook the corn until it’s tender and has a nice char, as this adds a smoky and slightly sweet flavor to the salad. Feel free to customize the salad with additional vegetables of your choice, such as radishes, carrots, or even grilled zucchini. For a spicy twist, add some diced jalapeños or a pinch of red pepper flakes to the dressing. Serve the salad chilled or at room temperature, allowing the flavors to meld together. This salad is versatile and can be enjoyed as a standalone meal or as a side dish alongside grilled chicken, shrimp, or steak. Enjoy!
