  • Cook Time: 5-6 minutes
  • Total Time: 20-21 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small tortillas

For the slaw:

  • 2 cups thinly sliced cabbage
  • 1/2 cup grated carrots
  • 1/4 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste

For serving:

  • Fresh cilantro leaves
  • Lime wedges

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the shrimp, olive oil, paprika, garlic powder, salt, and pepper. Toss to coat the shrimp evenly.
  3. Thread the seasoned shrimp onto skewers and grill for 2-3 minutes on each side, or until they turn opaque and slightly charred.
  4. While the shrimp are grilling, prepare the slaw. In a large bowl, combine the cabbage and grated carrots.
  5. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss to coat.
  6. Warm the tortillas on the grill for about 10 seconds on each side.
  7. To assemble the tacos, place a generous spoonful of the creamy and crunchy slaw on each tortilla. Top with grilled shrimp.
  8. Garnish with fresh cilantro leaves and a squeeze of lime juice.
  9. Serve the Grilled Shrimp Tacos immediately and enjoy!

Notes

Don’t overcook the shrimp to ensure they remain tender and juicy. Feel free to customize the slaw by adding sliced radishes, red onion, or jicama for extra crunch and flavor. For a spicy kick, sprinkle red pepper flakes or drizzle hot sauce over the assembled tacos. Pair these tacos with a side of black beans or Mexican rice for a well-rounded meal. Enjoy!
