  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) coconut milk
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 tablespoon vegetable oil

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.
  2. Add the coconut milk to the skillet and stir well to combine with the curry paste. Bring the mixture to a simmer.
  3. Add the bell pepper and mushrooms to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the fish sauce, brown sugar, and lime juice. Allow the flavors to meld together for another 2 minutes.
  5. Add the shrimp to the skillet and cook for 5-7 minutes until they turn pink and are cooked through.
  6. Remove the skillet from heat and stir in the torn basil leaves and chopped cilantro.
  7. Serve the spicy shrimp curry over steamed jasmine rice or with a side of naan bread.

Notes

Feel free to adjust the level of spiciness by adding more or less red curry paste according to your preference. For an extra flavor boost, marinate the shrimp in a mixture of lime juice, fish sauce, and garlic for 10-15 minutes before cooking. Feel free to customize the vegetables by adding other favorites such as snap peas, bamboo shoots, or baby corn. To enhance the creaminess of the curry, stir in a spoonful of creamy peanut butter during the cooking process if desired. Garnish the dish with additional fresh herbs, lime wedges, or chopped peanuts for added texture and freshness. Enjoy!
