Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 large tortillas
  • Shredded lettuce
  • Shredded cheese (cheddar, Monterey Jack, or your favorite)
  • Salsa, for serving
  • Other toppings as desired (corn, avocado, jalapeno, etc)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  2. Add the ground turkey to the skillet and cook until browned, breaking it up into crumbles with a spoon as it cooks.
  3. Stir in the ground cumin, chili powder, paprika, salt, and pepper, and cook for another 1-2 minutes to allow the spices to infuse the meat.
  4. Add the drained and rinsed black beans to the skillet and stir well to combine. Cook for an additional 2-3 minutes until the beans are heated through.
  5. Warm the tortillas according to package instructions or by placing them briefly on a hot skillet.
  6. Assemble the burritos by spooning the turkey and bean mixture onto the center of each tortilla. Top with shredded lettuce and a sprinkle of shredded cheese.
  7. Fold the sides of the tortillas over the filling, then roll them up tightly to form the burritos.
  8. Serve the burritos with a side of salsa for dipping or drizzling over the top.
