- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- Yield: 4 burritos 1x
Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 can (15 ounces) black beans, drained and rinsed
- 4 large tortillas
- Shredded lettuce
- Shredded cheese (cheddar, Monterey Jack, or your favorite)
- Salsa, for serving
- Other toppings as desired (corn, avocado, jalapeno, etc)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it up into crumbles with a spoon as it cooks.
- Stir in the ground cumin, chili powder, paprika, salt, and pepper, and cook for another 1-2 minutes to allow the spices to infuse the meat.
- Add the drained and rinsed black beans to the skillet and stir well to combine. Cook for an additional 2-3 minutes until the beans are heated through.
- Warm the tortillas according to package instructions or by placing them briefly on a hot skillet.
- Assemble the burritos by spooning the turkey and bean mixture onto the center of each tortilla. Top with shredded lettuce and a sprinkle of shredded cheese.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form the burritos.
- Serve the burritos with a side of salsa for dipping or drizzling over the top.
Notes
Feel free to experiment with other toppings such as diced tomatoes, sliced avocado, or a dollop of sour cream. These burritos pair nicely with a side of Mexican rice or a refreshing side salad. These are also great to make in advance and pull out throughout the week as needed. Enjoy!
