Ingredients

Units Scale

For the Kalua Pork:

  • 4 lbs (1.8kg) pork shoulder (Boston butt)
  • 1 tablespoon Hawaiian sea salt or kosher salt
  • 1 tablespoon liquid smoke (optional)

For the Sliders:

  • 12 Hawaiian rolls
  • 1 cup (100g) shredded carrots
  • 1/2 cup (50g) chopped green onions
  • 1/2 cup (120ml) barbecue sauce (optional)

Instructions

  • Prepare the pork (10 minutes): Preheat your oven to 300°F (150°C) or set up a slow cooker. Rub the pork shoulder with the Hawaiian sea salt and liquid smoke.
  • Cook the pork (8-10 hours):
    • Oven method: Wrap the seasoned pork tightly in aluminum foil and place it in a roasting pan. Roast in the preheated oven for 8-10 hours, or until the pork is tender and easily shreds with a fork.
    • Slow cooker method: Place the seasoned pork in the slow cooker. Cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.
  • Shred the pork (10 minutes): Once the pork is cooked, remove it from the oven or slow cooker and let it cool slightly. Shred the pork using two forks, discarding any excess fat. Reserve some of the cooking juices to moisten the shredded pork if necessary.
  • Prepare the toppings (5 minutes): While the pork is cooling, shred the carrots and chop the green onions.
  • Assemble the sliders (10 minutes): Slice the Hawaiian rolls in half. If desired, toast the rolls lightly. Place a generous amount of shredded Kalua pork on the bottom half of each roll. Top with shredded carrots and chopped green onions. Drizzle with barbecue sauce if using. Cover with the top half of the roll.

Notes

To perfect these Kalua pork sliders, ensure the pork is cooked low and slow to achieve the most tender and flavorful meat.

You can customize the sliders by adding other toppings such as coleslaw, pickles, or a spicy mayo.

These sliders are best served fresh but can be reheated if needed.

Enjoy the sweet and savory flavors of these Hawaiian-inspired sliders!

Pair this with...

Cauliflower Tots

Start by steaming cauliflower florets until they're tender. Once cooled, pulse them in a food processor until they're rice-like but not pureed. In a bowl, combine the riced cauliflower, breadcrumbs, grated cheese (like cheddar or Parmesan), an egg, and some salt and pepper for seasoning. Mix it all together until it forms a moldable mixture. Shape them into tots using your hands. Now, heat a skillet with a bit of oil and pan-fry the tots until they're golden brown on all sides, or you can bake them at 400°F (200°C) for around 20 minutes. Once they're crispy and golden, serve with your favorite dipping sauce.

Watermelon and Feta Salad

First, cube up some chilled watermelon, getting rid of any seeds. Scatter a good handful of fresh blueberries over it. Now, for the contrast: crumble or cube some tangy feta cheese over the sweet fruits. The creamy, salty bite of the cheese complements the sweetness perfectly. If you're in the mood for a dash of zest, drizzle a light lemon or lime dressing over the top. Maybe even sprinkle on some chopped fresh mint or basil. Mix it gently, and voila!

Chunky Potato Salad

Start with some good-quality, sturdy potatoes like Yukon Gold or red potatoes. Boil them until they're fork-tender but still hold their shape. Once cooled, cut them into generous chunks. Mix in some finely chopped celery and red onion, adding both crunch and a touch of zesty flavor. For the dressing, combine mayonnaise, a dash of mustard, and a sprinkle of salt and pepper, creating a creamy blend that brings everything together. Once the potatoes are coated in this rich dressing, transfer the salad to a serving dish. For the finishing touch, give it a generous sprinkle of paprika on top. Not only does it add a subtle smokiness, but it also gives the salad a vibrant pop of color.
