  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 4 cups beef or vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large soup pot or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onions and minced garlic, sautéing until they become soft and fragrant, about 2-3 minutes.
