- Total Time: 30 minutes
- Yield: 4 servings 1x
Ingredients
- 1.5 lbs beef roast (such as chuck or sirloin)
- 2 tablespoons olive oil
- 2 tablespoons instant coffee granules
- 1 teaspoon paprika
- Salt and pepper, to taste
- 4 large russet potatoes, peeled and diced
- 1/2 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- Fresh herbs, for garnish
- Coffee beans for garnish, if desired
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon instant coffee granules
- Salt and pepper, to taste
Instructions
- In a small bowl, mix the instant coffee, paprika, salt, and pepper. Rub this mixture all over the beef roast.
- In a large skillet, heat olive oil over medium-high heat. Add the beef roast and sear it on all sides until nicely browned, about 3-4 minutes per side. Remove the roast from the skillet and set aside.
- In the same skillet, add the diced potatoes. Cook them for about 10-12 minutes, or until they’re tender and slightly golden.
- While the potatoes are cooking, in a separate saucepan, heat the milk and butter over low heat until the butter is melted. Remove from heat.
- Mash the cooked potatoes and gradually mix in the warm milk and butter mixture. Stir in the shredded cheddar cheese until the potatoes are creamy and the cheese is melted. Season with salt and pepper to taste.
- For the coffee-infused gravy, in a small saucepan, melt the butter over medium heat. Stir in the flour to create a roux, and cook for 1-2 minutes until lightly golden.
- Gradually whisk in the beef broth and instant coffee granules. Bring the mixture to a simmer and cook until the gravy thickens. Season with salt and pepper to taste.
- Slice the beef roast and serve it over a bed of the creamy cheddar mashed potatoes. Drizzle the coffee-infused gravy over the roast slices. Garnish with chopped fresh herbs and/or coffee beans if desired.
Notes
For an ever deeper coffee flavor, you can marinate the beef roast with the coffee mixture for 20-30 minutes before cooking. You can also customize the level of coffee flavor by adjusting the amount of instant coffee used. For your mashed potatoes, you can add more milk if you prefer a thinner consistency. If you want your mashed potatoes to have a kick, feel free to add some red pepper flakes. Serve this comforting dish with a side of roasted vegetables or a crisp green salad. Enjoy!
