Hamburger soup is a hearty and comforting dish that’s perfect for a quick and easy dinner.   • 1 lb. ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 carrot, peeled and chopped
  • 1 celery stalk, chopped
  • 1 cup thinly sliced zucchini
  • 1 cup diced potatoes
  • 1 tsp. dried thyme
  • 1 tsp. dried basil
  • Salt and pepper, to taste

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks. This should take about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot, and sauté for 2-3 minutes until the onion is translucent.
  3. Add the beef broth, diced tomatoes, chopped carrots, chopped celery, potatoes, zucchini, dried thyme, dried basil, and salt and pepper to the pot. Stir well to combine.
  4. Bring the soup to a simmer, then reduce the heat to medium-low and let it cook for 15-20 minutes, until the vegetables are tender.
  5. Taste the soup and adjust the seasoning as needed. Serve hot.

Notes

Try topping this soup with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped fresh parsley or cilantro. For a spicier version, add a pinch of red pepper flakes or a diced jalapeño pepper. Leftovers can be stored in the refrigerator for up to 3-4 days, or frozen for longer storage. To reheat, simply heat the soup in a pot over medium heat until heated through. Serve with a side of bread or a toasted hamburger bun!
