  • 1/4 cup capers, drained and rinsed
  • 1 cup canned artichoke hearts, drained and quartered
  • 1 cup tomatoes, chopped
  • 12 oz fusili noodles, cooked according to package instructions
  • Chopped fresh parsley, for garnish

Instructions

  1. Start by seasoning the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
