For the pizza:

  • 1 prepared pizza dough
  • 1 cup white sauce (recipe follows)
  • 2 cups sliced mushrooms (e.g., cremini or button or a combo)
  • 1 1/2 cups shredded Parmesan cheese
  • Fresh thyme leaves, for garnish (optional)
  • Salt and black pepper to taste

For the white sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and white pepper to taste

Instructions

  1. In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant.
  2. Sprinkle in the flour and cook, stirring continuously, until it forms a smooth paste (about 2 minutes).
  3. Gradually whisk in the milk and heavy cream, ensuring no lumps form.
  4. Cook the sauce until it thickens, which should take about 5 minutes.
  5. Stir in grated Parmesan cheese until it’s fully incorporated.
  6. Season with salt and white pepper. Set aside.
  7. Preheat your oven to 450°F (232°C).
  8. Roll out the pizza dough on a floured surface into your desired shape.
  9. Transfer the dough to a pizza stone or baking sheet.
  10. Spread a generous layer of the white sauce over the dough, leaving a small border for the crust.
  11. Scatter the sliced mushrooms evenly over the sauce.
  12. Sprinkle the shredded Parmesan cheese on top.
  13. Season with salt and black pepper.
  14. Place the pizza in the preheated oven.
  15. Bake for about 10 minutes, or until the crust is golden brown, the cheese is bubbling, and the mushrooms are tender.
  16. Remove the pizza from the oven and let it cool slightly. Garnish with fresh thyme leaves, if desired.
  17. Slice, serve, and enjoy!

Notes

Don’t skip making your white sauce from scratch. It’s the heart of this pizza and offers a creamy, luxurious base. Feel free to experiment with different mushrooms like shiitake or oyster for added depth of flavor. Do make sure to preheat your oven adequately to achieve a crisp, golden crust.  Use fresh Parmesan cheese for the best flavor. Grate it just before using. Enjoy!
