  • 2 cups Brussels sprouts, trimmed and sliced
  • 4 slices bacon, diced
  • 1/2 cup chopped nuts (e.g., walnuts or pine nuts)
  • 3 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain the cooked pasta and set it aside.
  2. While the pasta is cooking, preheat your oven to 400°F (200°C). On a baking sheet, toss the sliced  Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Roast in the preheated oven for about 15 minutes or until the sprouts are tender and lightly caramelized.
  3. In a large skillet, cook the diced bacon over medium heat until it becomes crispy. Remove the bacon from the pan and set it aside, leaving the bacon grease in the skillet.
  4. In the same skillet with the bacon grease, add the remaining tablespoon of olive oil, minced garlic, and red pepper flakes (if using). Sauté for about 1 minute until the garlic becomes fragrant.
  5. Add the cooked spaghetti, roasted Brussels sprouts, and half of the crispy bacon to the skillet. Toss everything together to combine.
  6. Serve the spaghetti with a sprinkle of grated Parmesan cheese, the remaining bacon, and chopped nuts. Garnish with fresh parsley for an extra touch of color and flavor.
