Ingredients

  • 1 cup dried green or brown lentils, rinsed
  • 1 cup diced carrots
  • 1 cup diced red peppers
  • 1/2 cup diced onions
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for topping

Instructions

  1. In a large pot, bring water to a boil and cook the macaroni noodles according to the package instructions. Drain and set aside.
  2. In another pot, combine the rinsed lentils with 2 cups of water. Bring to a boil, then reduce the heat to a simmer. Cook the lentils for about 15-20 minutes, or until they’re tender but still hold their shape. Drain any excess water and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onions, carrots, and red peppers. Sauté for about 5-7 minutes, or until the vegetables are slightly softened.
  4. Add the minced garlic and dried thyme to the skillet. Sauté for an additional 1-2 minutes until fragrant.
  5. Stir in the cooked lentils and cooked macaroni noodles. Season with salt and pepper to taste. Cook for a couple of minutes until everything is well combined and heated through.
  6. Serve the lentil and veggie pasta in bowls, topped with freshly grated Parmesan cheese.
