Ingredients

  • 2 ripe peaches, pitted and cut into slices
  • 4 oz prosciutto, cut into thin strips
  • 1/2 cup toasted pecans, roughly chopped
  • 4 cups mixed greens
  • 2 oz blue cheese, crumbled

  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (can also use grill pan).
  2. Brush the peach slices with olive oil, wrap each peach slice in a slice of prosciutto, and place them on the grill. Grill for about 3-4 minutes or until they have grill marks.
  3. In a large mixing bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Add the mixed greens to the bowl and toss to coat with the dressing.
  5. Arrange the dressed greens on a serving platter and top with the grilled peaches, pecans, and crumbled blue cheese.

Notes
