Ingredients
- 2 ripe peaches, pitted and cut into slices
- 4 oz prosciutto, cut into thin strips
- 1/2 cup toasted pecans, roughly chopped
- 4 cups mixed greens
- 2 oz blue cheese, crumbled
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat (can also use grill pan).
- Brush the peach slices with olive oil, wrap each peach slice in a slice of prosciutto, and place them on the grill. Grill for about 3-4 minutes or until they have grill marks.
- In a large mixing bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Add the mixed greens to the bowl and toss to coat with the dressing.
- Arrange the dressed greens on a serving platter and top with the grilled peaches, pecans, and crumbled blue cheese.
Notes
