Despite its name, a breakfast burrito isn’t just for breakfast. Packed with protein and healthy fats, it makes an excellent lunch or dinner option when you’re short on time.  Quick, tasty, and totally customizable, breakfast burritos are a staple in my house — and it’s not hard to see why!

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon butter
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • Breakfast meat of choice
  • Salsa, optional
  • Avocado slices, optional

Instructions

  1. In a medium bowl, whisk together eggs, milk, salt, and black pepper.
  2. In a large skillet over medium heat, melt butter. Add egg mixture and cook, stirring occasionally, until set, about 3-5 minutes.
  3. Warm up tortillas in the microwave for about 15-20 seconds until they are soft and pliable.
  4. On each tortilla, place a scoop of the scrambled eggs, a handful of shredded cheese, and some crumbled bacon. Add salsa and avocado slices if desired.
  5. Fold in the sides of the tortilla and roll up tightly into a burrito.
  6. Place burrito into a clean skillet over medium heat, flipping once until both sides are crisp.
  7. Serve immediately or wrap tightly in foil to keep warm until ready to eat.

Notes

Feel free to swap in other fillings or toppings including black beans, diced tomatoes, or a handful of spinach. You can also make these healthier by using turkey bacon or turkey sausage. These are also great to make ahead of time and heat up for breakfast, lunch, or another dinner at any point in the next few days!
