  • 3 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz/425g) white beans, drained and rinsed
  • 4 cups chopped kale leaves, tough stems removed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook, breaking it up into crumbles with a spoon, until browned and cooked through. Remove the sausage from the pot and set it aside.
  2. In the same pot, add the diced onion, sliced carrots, and sliced celery. Sauté for 5 minutes, or until the vegetables start to soften. Add the minced garlic and cook for an additional minute.
  3. Pour in the chicken or vegetable broth, and add the cooked sausage, white beans, chopped kale, dried thyme, and dried oregano. Stir well to combine. Season with salt and pepper to taste.
