  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 2 lbs fresh mussels, cleaned and debearded
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup Sauvignon Blanc or other dry white wine
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Crushed red pepper flakes (optional, for heat)
  • Crusty bread or French baguette (for serving)

Instructions

  1. Before starting, inspect the mussels. Discard any that are open or have cracked shells. Scrub them under cold running water, removing any sand or debris. Pull off the beards (the thread-like fibers) from the shells. Set aside.
  2. In a large, deep skillet or Dutch oven, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  3. Pour in the white wine and chicken or vegetable broth. Bring the mixture to a simmer.
  4. Carefully add the cleaned mussels to the simmering liquid. Cover the skillet or pot and let the mussels steam for about 5-7 minutes. They are done when the shells have opened. Discard any mussels that haven’t opened.
  5. Sprinkle the mussels with fresh parsley and season with salt and black pepper to taste. If you like a bit of heat, add some crushed red pepper flakes.
  6. Transfer the mussels and the aromatic broth to a large serving bowl or individual bowls. Serve immediately with crusty bread or a French baguette for dipping.

Notes

Ensure all mussels are tightly closed before cooking. Discard any that are open as this means they’ve gone bad prior to cooking. The cooking time for mussels may vary slightly depending on their size, so keep an eye on them. Feel free to customize the broth with your favorite herbs or a squeeze of fresh lemon juice for added brightness. Serve with crusty bread and your favorite side salad for a complete meal and enjoy!
