Ingredients

Units Scale
  • 2 cups rotini pasta
  • 1 lb. large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup unsalted butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Crushed red pepper flakes (optional, for added heat)

Instructions

  1. Boil the Pasta (8-10 minutes): In a large pot of salted boiling water, cook the rotini pasta according to package directions until al dente. Drain and set aside.
  2. Prepare the Shrimp and Broccoli (5-7 minutes): In a large skillet, heat olive oil over medium heat. Add the shrimp and cook until pink on both sides. Remove and set aside. In the same skillet, add the broccoli florets and sauté until they’re bright green and slightly tender. Remove and set aside.
  3. Prepare the Alfredo Sauce (10-12 minutes): In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for about a minute, or until fragrant. Pour in the heavy cream and bring to a simmer. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste. For extra heat, add crushed red pepper flakes.
  4. Combine Everything (2-3 minutes): Return the cooked shrimp and broccoli to the skillet. Stir to coat them in the Alfredo sauce. Finally, add the cooked rotini pasta and toss everything together until well combined.
  5. Serve (1-2 minutes): Transfer to plates or bowls, garnish with chopped parsley, and serve immediately.

Notes

The creaminess of the Alfredo sauce pairs beautifully with the succulent shrimp and crunchy broccoli, making each bite a delight. Serve with a light, crisp salad or garlic bread to round out the meal. And don’t forget a sprinkle of extra Parmesan on top for an added touch of richness!
