We make sausage and peppers almost weekly in my house because it’s so easy and delicious. This savory and flavorful dish combines Italian sausage, colorful bell peppers, and onions in a simple tomato sauce. It can be served as is or with your favorite pasta or bread.

  • 5 Italian sausages (sweet or hot)
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large skillet over medium heat, add olive oil and sausage. Cook for about 5 minutes or until browned.
  2. Add bell peppers and onion to the skillet and cook for 5-7 minutes, or until the vegetables are tender.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the canned diced tomatoes, dried basil, dried oregano, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a simmer and reduce the heat to low. Cover and let it cook for 10 minutes.
  6. Remove the lid and let it cook for an additional 5 minutes to allow the sauce to thicken.
  7. Garnish with chopped fresh parsley, if desired.

Notes

For a quicker cooking time, you can use pre-cooked sausage instead of raw sausage. You can also add additional seasonings such as red pepper flakes or paprika to give the dish some extra heat. This dish is also great for meal prepping and can be reheated easily throughout the week.
