  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced

  • 4 large flour tortillas

Instructions

  1. Season the chicken breasts with chili powder, cumin, paprika, salt, and black pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  3. Add the chicken breasts and cook for about 6-7 minutes per side or until cooked through.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
  5. In the same skillet, add the remaining 1 tablespoon of olive oil.
  6. Sauté the chopped onion, red bell pepper, and yellow bell pepper until they become tender.
  7. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  8. Lay out one tortilla and sprinkle a quarter of the shredded cheddar cheese evenly over the entire tortilla.
  9. Arrange a portion of the sliced chicken and sautéed bell pepper mixture on one half of the tortilla.
  10. Fold the other half of the tortilla over to cover the filling, creating a half-moon shape.
  11. Heat a large skillet or griddle over medium heat and lightly coat it with cooking spray.
  12. Place one quesadilla on the skillet and cook for about 2-3 minutes per side or until the tortilla is crispy and the cheese is melted.
  13. Repeat the process for the remaining quesadillas.
  14. Remove the quesadillas from the skillet and let them cool for a minute before slicing each into wedges.
