  • Prep Time: 20 minutes
  • Cook Time: 5 minutes
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound pork loin, thinly sliced
  • 1/4 cup soy sauce
  • 3 tablespoons gochugaru (Korean red pepper flakes)
  • 2 tablespoons brown sugar
  • 2 tablespoons mirin (rice wine)
  • 2 tablespoons minced garlic
  • 1 tablespoon grated ginger
  • 2 tablespoons sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. In a bowl, combine the soy sauce, gochugaru, brown sugar, mirin, minced garlic, grated ginger, and sesame oil. Mix well until the sugar is fully dissolved.
  2. Place the thinly sliced pork in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring all slices are coated evenly. Seal the bag or cover the dish and refrigerate for at least 10 minutes, or longer if time permits.
  3. Heat a large skillet or pan over medium-high heat. Add the marinated pork and cook for about 3-5 minutes, stirring frequently until the pork is cooked through and slightly caramelized.
  4. Sprinkle the cooked pork with toasted sesame seeds and thinly sliced green onions. Serve your spicy Korean pork bulgogi hot over steamed rice, in lettuce wraps, or with your favorite side dishes.

Notes

While a 10-minute marinade will infuse plenty of flavor, if you have more time, marinate the pork for up to 30 minutes in the refrigerator for a deeper taste. Feel free to adjust the amount of gochugaru to your preferred spice level. Start with less if you’re sensitive to heat, and add more for an extra kick. Enjoy your pork bulgogi with steamed rice, as a filling for lettuce wraps, or in a bowl with sautéed vegetables. The options are endless!
