  • 1 lb sushi-grade tuna, cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sriracha sauce
  • 1 tsp honey
  • 1 tsp grated ginger
  • 1 avocado, diced
  • 1 cup edamame, shelled and steamed
  • 1 cup seaweed salad
  • 2 cups cooked sushi rice
  • 1 tbsp sesame seeds
  • 2 green onions, thinly sliced
  • Any other toppings or garnishes you like (cucumber, tomatoes, crispy wontons, pickled ginger, etc)

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, sriracha, honey, and grated ginger.
  2. Add cubed tuna to the marinade and stir gently to coat. Set aside.
  3. Assemble the poke bowls by placing a scoop of sushi rice into each bowl, then topping with marinated tuna, diced avocado, steamed edamame, seaweed salad, and any other toppings.
  4. Sprinkle sesame seeds and sliced green onions on top of the bowls.
  5. Serve immediately and enjoy!
