- Prep Time: 23 minutes + freeze time
- Total Time: 23 minutes + 4 hour minimum freeze time
- Yield: Typically 8–10 pops 1x
Ingredients
- 2 cups fresh strawberries, hulled
- 2 cups plain Greek yogurt
- 1/4 cup honey or to taste
- 1 teaspoon vanilla extract
- Optional: Additional fruit pieces or mini chocolate chips for mix-ins
- Popsicle molds
Instructions
- Prepare the Fruit (5 minutes): Wash and hull the strawberries. If using additional fruit pieces, prepare them at this time as well.
- Blend Ingredients (5 minutes): In a blender, combine the strawberries, Greek yogurt, honey, and vanilla extract. Blend until the mixture is smooth. Taste and adjust the sweetness with more honey if desired.
- Add Mix-ins (Optional, 2 minutes): If adding extra fruit pieces, additional strawberries, or mini chocolate chips, stir them into the mixture after blending.
- Fill Popsicle Molds (5 minutes): Pour the mixture into popsicle molds. If your molds have slots for sticks, insert the sticks now. If not, freeze the molds for about an hour, then insert wooden popsicle sticks and return to the freezer.
- Freeze (At least 4 hours or overnight): Freeze the pops until they are completely solid, ideally overnight.
- Unmold and Serve (5 minutes): To release the pops from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the pops out of the molds.
- Enjoy (1 minute): Serve your pops immediately for a refreshing, creamy treat.
Notes
These pops are as versatile as they are delicious. For a smoother texture, use Greek yogurt with higher fat content. The honey can be adjusted based on the sweetness of the strawberries and personal preference.
Experiment with different fruits or add-ins like granola for a twist on the classic strawberry flavor. These pops are not only a delightful way to beat the heat but also a healthy alternative to traditional ice cream or popsicles. Enjoy!
