Ingredients

  • 2 cups of broccoli florets, chopped
  • 1 cup of grated cheddar cheese
  • 2 cups of chicken or vegetable broth
  • 1 cup of milk
  • 1/4 cup of flour
  • 1/4 cup of butter
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 bread bowls (store-bought or homemade)
  • 4 slices of bacon, cooked and crumbled

Instructions

  1. Cut the top off of each bread bowl and remove the inside bread, leaving a 1/2-inch border around the edges.
  2. In a large pot, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Whisk in the flour and cook for 1-2 minutes until bubbly.
  4. Gradually whisk in the chicken or vegetable broth and milk. Bring the mixture to a boil and cook for 5-7 minutes, stirring frequently, until the mixture has thickened.
  5. Add the chopped broccoli to the pot and cook for an additional 5-7 minutes, or until tender.
  6. Stir in the grated cheddar cheese and season with salt and pepper to taste.
  7. Ladle the broccoli cheese soup into the bread bowls and garnish with crumbled bacon.

Notes
