Ingredients
- 2 cups of broccoli florets, chopped
- 1 cup of grated cheddar cheese
- 2 cups of chicken or vegetable broth
- 1 cup of milk
- 1/4 cup of flour
- 1/4 cup of butter
- 2 cloves of garlic, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 bread bowls (store-bought or homemade)
- 4 slices of bacon, cooked and crumbled
Instructions
- Cut the top off of each bread bowl and remove the inside bread, leaving a 1/2-inch border around the edges.
- In a large pot, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Whisk in the flour and cook for 1-2 minutes until bubbly.
- Gradually whisk in the chicken or vegetable broth and milk. Bring the mixture to a boil and cook for 5-7 minutes, stirring frequently, until the mixture has thickened.
- Add the chopped broccoli to the pot and cook for an additional 5-7 minutes, or until tender.
- Stir in the grated cheddar cheese and season with salt and pepper to taste.
- Ladle the broccoli cheese soup into the bread bowls and garnish with crumbled bacon.
Notes
If you prefer a smoother texture, you can use an immersion blender to puree the soup before adding the cheese. For a creamier soup, feel free to swap out a little milk for half and half or heavy cream. This soup freezes well so why not make a big batch and save for a rainy day? Enjoy!Â
