  • Sliced avocado, for serving
  • Chopped fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté for about 5 minutes until they become soft and translucent.
  2. Add the ground cumin, chili powder, and dried oregano to the pot. Stir well to coat the onions and garlic with the spices.
  3. Pour in the diced tomatoes, enchilada sauce, and chicken broth. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld together.
  4. Add the shredded cooked chicken, black beans, and corn kernels to the pot. Stir to combine and let the soup simmer for another 5 minutes until everything is heated through.
